Prepare the filling<\/p>\n<p>1.\u00a0Put cherries, sugar, lemon juice and cinnamon stick in a saucepan over low heat for about 15 minutes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-7799\" src=\"http:\/\/c9toronto.net\/wp-content\/uploads\/2021\/12\/20211125_194301-150x150.jpg\" alt=\"20211125_194301\" width=\"150\" height=\"150\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-7798\" src=\"http:\/\/c9toronto.net\/wp-content\/uploads\/2021\/12\/20211125_195632-150x150.jpg\" alt=\"20211125_195632\" width=\"150\" height=\"150\" \/><\/p>\n<p>2.\u00a0 Add cherry brandy to thd mixture.<\/p>\n<p>3. Discard cinnamon stick.<\/p>\n<p>4. Put aside 1 cup of the cherry juice ftom the mixture.\u00a0 This is the cherry syrup.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-7796\" src=\"http:\/\/c9toronto.net\/wp-content\/uploads\/2021\/12\/20211125_195628-150x150.jpg\" alt=\"20211125_195628\" width=\"150\" height=\"150\" \/><\/p>\n<p>5. Dissolve 1 tablespoonful of corn starch in 1\/4 cup of water, add to the cherry filling to thicken the sauce.<\/p>\n<p>6. Cool both the cherry syrup and the cherry filling.<\/p>\n<p>Ganache<\/p>\n<p>1.\u00a0 Warm whipping cream over a pot of hot water.<\/p>\n<p>2. Put aside until cool.<\/p>\n<p>Assemble the cake<\/p>\n<p>1. Slice the sponge cake into 3 slices, you will have 3 circular pieces.<\/p>\n<p>2. Add vanvilla sugar and Whip-it to the whipping cream, whip until firm.<\/p>\n<p>3. Put the whipped cream into a pipping bag, cut the tip of the pipping bag.<\/p>\n<p>4. Pipe a circle of whipped cream along the edge of a slice of cake, and at the centre.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-7800\" src=\"http:\/\/c9toronto.net\/wp-content\/uploads\/2021\/12\/20211111_225328-150x150.jpg\" alt=\"20211111_225328\" width=\"150\" height=\"150\" \/><\/p>\n<p>5. Spoon the cherry filling onto the cake.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-7801\" src=\"http:\/\/c9toronto.net\/wp-content\/uploads\/2021\/12\/20211111_225419-150x150.jpg\" alt=\"20211111_225419\" width=\"150\" height=\"150\" \/><\/p>\n<p>6. Place a slice of cake onto the first layer, brush the surface with cherry syrup.<\/p>\n<p>7. Repeat #5 and 6.<\/p>\n<p>8. Cover the side and top of cake with the remaining whipped cream, smooth it with a spatula.
