合桃牛油蛋糕

材料:

牛油        6 安士

糖            6 安士

蛋            6 隻

麵粉        6 安士

發粉        2 湯匙

鹽            少許

合桃肉     4 安士

做法:

1. 預熱焗爐至 175 度 C.

2. 合桃肉放在焗盆上, 焗大約 5 分鐘, 取出攤凍.

3. 把已攤凍的合桃, 灑上麵粉, 用篩把多餘的麵粉篩走. 這樣合桃肉不會沉到蛋糕的底部.

4. 牛油放至室溫, 用刀切成小粒, 放在大盆中 與糖用木匙攪拌至輕身, 呈奶白色.

5. 把雞蛋逐隻加入牛油與糖的混合物內, 拌勻才加第二隻.

6. 把麵粉、發粉和鹽拌勻, 分二次篩入蛋和牛油的混合物內.

7. 加入合桃, 輕輕拌勻, 把混合物倒入焗盆中, 焗35 分鐘至熟.

8. 取出, 放在架上攤凍, 切片便可享用. Yummy!

小貼士:

1. 我用的是矽膠焗盆, 好處是不用塗油在焗盆內, 蛋糕都可輕易脫模. 如果用傳統的焗盆, 便要在焗盆內塗上牛油 並灑上麵粉, 或用牛油紙.

2. 焗的時間會因焗爐和焗盆的大小而略有不同. 當放一枝牙簽入蛋糕內, 拔出來是沒有蛋漿沾著的話, 蛋糕已熟
