鮮忌廉雜果蛋糕

1. 海棉蛋糕

蛋           3 隻

糖           半杯

麵粉        半杯

發粉       1/4 茶匙

溶牛油    2 湯匙

2. 餡料:

魚膠粉    2 茶匙

凍水        4 湯匙

Whipping Cream   2 杯 (500 ml)

糖霜        4 湯匙

罐頭雜果 1

杏仁片      1 杯

做法:

1. 焗爐預熱 170° C.

2. 蛋用電打蛋器用中速打至起泡, 逐小加入糖霜, 用中高速打至淡黃色.

3. 把麵粉、發粉和鹽拌勻, 把1/3份篩入已打起的蛋中, 拌勻. 把其餘的粉分2次篩入蛋糊中, 拌勻.

4. 把大約1/4 的麵粉糊放入碗中, 加入溶牛油, 拌勻然後倒回其餘的麵粉糊中,快手拌勻.

5. 倒入已鋪上牛油紙的焗盆中, 放入已預熱的焗爐中, 焗25-30分鐘至蛋糕熟.

6. 取出, 放在架上放涼.

7.  把杏仁放入焗爐內, 用 150 º C 焗 5 分鐘 (至金黃色). 罐頭雜果隔去水份.

8. 把 2 湯匙凍水放入小杯中, 輕輕把魚膠粉灑在水上. 把小杯放入一小煲, 用小火把魚膠粉「座」溶.請勿攪拌.當魚膠粉溶解,後把小杯取出備用.

9. 鮮忌廉及糖霜放入大碗中, 用中速打起, 加入魚膠粉水,用中高速打至硬身.

10. 把蛋糕打橫切成 2 薄片, 取一片放在轉盤或大碟上, 切面向上. 薄薄地塗上一層已打起的忌廉.

11.  把已滴乾水 (我用抹手紙把水索乾) 的雜果鋪在忌廉上. 加上忌廉, 用膠刀小心把掃平. 把第二片蛋糕鋪在上面, 切面向下 (我反轉了!!) 把忌廉掃在整個蛋糕面和邊上, 用膠刀小心把忌廉掃平.

12. 把烘香的杏仁片小心放在蛋糕邊上.

13. 把餘下的忌廉放入唧花袋, 出花邊, 或你的設計, 加上鮮果、朱古力絲等等…..
